The Fukito Rosewood DamascusBread knife lets you cut bread, brioche and entremets without damaging them, thanks to the serrated surface of its blade. With a length of 20cm, it adapts to most dishes and facilitates cutting.
First, let's talk about the blade! It is vacuum heat-treated. This process is advantageous because, during standard heat treatment, certain elements present in the air can react with the metal, even during tempering. This is the case, for example, with oxygen, hydrogen... And this can have an impact on the blade. Here, heat treatment takes place in a protected atmosphere, free from all elements. As a result, the blade can be processed to its full potential.
It has an attractive damascened surface that gives it character. But what is damascus? Damascus is built with a rigid core at its base, which is then enveloped by different layers of less rigid steel. The final alloy is therefore very well balanced.
The knife core here is made of 10CR15COMOV stainless steel. It therefore has a carbon content of around 1.05%, which makes the cutting edge stiffer so that it retains its sharpness better. Stiffness is important because it allows you to sharpen it further, making your cuts smoother. The 10CR15COMOV also has a chromium content of around 15%, giving it excellent corrosion resistance.
This steel is then surrounded by several layers of less rigid stainless steel to balance the core. This makes it softer, without making it flexible. In fact, it makes it less brittle (a very rigid steel will tend to chip faster because it's not flexible, which is why it's a good idea to add a softer alloy to compensate).
Hammering completes the damascus finish, making the knife even more original.
A stainless steel Bolster links the blade to the handle.
Rosewood was chosen for the knife's handle: it's exotic, moisture-resistant and strong. Its attractive shades, ranging from brown to dark red, guarantee a unique look for each knife. Indeed, since wood is a natural material, it's impossible to have the same knife twice! Each piece is unique. The handle is also hand-polished.
The full-silk blade is attached to the rosewood by 3 rivets, for a perfect hold. The central rivet is a mosaic, adding a touch of originality to the knife! The handle is ergonomically shaped, with a slightly curved base that sits comfortably in the palm. This knife is suitable for both right- and left-handed cooks.
Finally, the knife comes in a magnetic box.
Fukito knives are made in Guangdong province, Western China. This location has been historically linked to knife production for decades. Each Fukito knife is produced using techniques and materials that meet the manufacturing standards of French food industry professionals. Choosing a Fukito knife means not compromising on the quality of the materials used, nor on their value for money.
How to care for my knife: The knife should be washed by hand, using a sponge and a mild detergent. Do not put it in the dishwasher or soak it in the sink. Once clean, wipe dry and store.
