This kitchen knife features a damascened blade with a rigid steel core surrounded by 66 layers of softer stainless steel. The blade, polished to a mirror finish, features a distinctive damask pattern.
The core is made of VG10 steel, an alloy containing around 1% carbon, increasing the blade's hardness to 60HRC on the Rockwell scale. This steel is also enriched with chromium and molybdenum for added strength.
Thanks to this hardness, the edge can be maintained with a Sharpening stone or, more regularly, with a Sharpening steel for daily sharpening.
The handle of this stainless steel knife is made of blue resin, a durable and robust material. Its blue color complements the light wood look at the base of the handle. A yellow and black ring adds a distinct touch of color between bolster and handle. The bolster and base are in stainless steel.
Its almost oval shape suits both left- and right-handed cooks, offering a comfortable grip even for prolonged use.
This damask knife is made in China and comes in a box for added protection.
To care for your Kutoyama knife, wash only by hand. After cleaning, wipe dry immediately before storing in a dry place. Do not put in the dishwasher or leave to soak in the sink.
