Description

Suehiro is a specialist in whetstones and sharpening utensils. Based in Japan, Suehiro develops accessories for professionals and hobbyists alike. Suehiro whetstones are renowned for their efficiency and longevity. When you buy from Suehiro, you can be sure that your favorite knives will be well cared for, to reveal their full cutting potential.

This Suehiro Debado LD-21 stone is wider than average, so you'll be able to use it for longer, as it wears less. This is also due to its firing process, and the fact that it contains no synthetic binder. Because of its durability, it is particularly recommended for professional use, but is also suitable for domestic use.

As it is non-absorbent, it only needs to be moistened before serving, which saves you time (no need to immerse it for ten minutes).

After a few moments of use, you'll notice a small colored sludge forming on the surface of the stone, and this is perfectly normal. This "sludge" is even essential, as it helps to sharpen the knife, so don't clean it during the process.

After use, you can rinse the used surface and clean it with a small, soft brush. Wipe with a dry cloth, then leave to dry in a room at room temperature (keep out of direct sunlight for faster drying).

Its #180 grit is considered thick. It is therefore suitable for knives with dull blades that need to be thoroughly reworked. It enables you to rework the cutting edge to clean it of the micro-steel splinters generated by numerous cuts.

A small Nagura stone is supplied with the main stone (approx. 6.5 x 2 x 1.5 cm). This small model is used to create the famous slurry that facilitates the stone's action. As already mentioned, this reinforces the stone's abrasive power, thus increasing its effectiveness.

A two-part base is also supplied, enabling you to stabilize the stone during use. It is removable, so you don't have to use it if you prefer to place the stone on a cloth, for example.

Please note: the stone's dimensions may vary by a few millimeters, and its weight by a few grams - this is perfectly normal.

Good but can be frustrating

An effective and very hard stone, it clogs very quickly and the only way to clean it is with silicone carbide powder. A diamond plate will only smooth it out, and so won't restore its effectiveness. There's a soft version of the same one, but this is the hard version. It doesn't make much mud, so you'll need to create some with the nagura supplied.

A good stone, very hard compared with the cerax range, it also clogs up a bit quickly compared with the cerax, but overall it doesn't penalize abrasion.
