Description

The Takeshi Saji VG10 Gold 16.5cm bunka knife is a versatile knife that can be used in the same way as a santoku knife: it can be used to chop, mince and minced fruits and vegetables, and even boneless meat. The only difference is its pointed blade, reminiscent of a katana blade.

Find out more about the blacksmith :

Takeshi Saji VG10 Gold japanese knives are entirely handcrafted by Takeshi Saji. He is an expert, highly regarded in the cutlery industry. He is particularly appreciated for the finesse and elegance he brings to his creations. He perfectly combines ancestral forging techniques with innovative designs that appeal to all cooks.

In the 90s, he was awarded the "Traditional Master Craftsman" certification for his work! His workshop is located in the famous Takefu Knife Village, one of Japan's leading knife-making centers. The Takefu Knife Village is home to a large number of skilled blacksmiths, all of whom work in the traditional way and keep the ancestral know-how alive. The new generation continues to be trained, and being brought together in the same place enables them to share their tricks of the trade.

The blade in detail:

The blade is damascened: it is made from several interlocking layers of steel, with a rigid core in the center. This core is encircled by softer steel, which softens the core and makes it more resistant to breakage.

In the center is a core of VG10 steel, a top-of-the-range Japanese alloy with an excellent reputation for sharpness. It is also enriched with 1% carbon, enabling it to achieve a hardness of 60 HRC on the Rockwell scale and a long-lasting sharp edge (for longer sharpening sessions!). Another advantage of VG10 is its ability to be sharpened to a razor-sharp edge.

Next, this core is enveloped by several layers of mild steel that form the damascus pattern. These layers are visible directly on the blade, as they form small waves all along the cutting surface. Beyond its technical advantages, damascus creates beautiful patterns that enhance the aesthetics of the blade. Here, the damascus is truly unique, as it features an attractive copper color.

Handle description :

Made from rosewood, the handle features beautiful shades of brown with dark veins for a unique look on every knife. Rosewood is an exotic species renowned for its resistance to shock and humidity.

The handle is complemented by a bolster in pakkawood, a composite material made from resin and compressed wood that is perfectly resistant to humidity and temperature variations. The bolster is white, its light color providing a nice contrast with the darker blade and handle.

Octagonal in shape, it's suitable for all cooks, right- or left-handed!

Wood pulp has been inserted into the space between the blade and handle. This makes the knife perfectly watertight and hygienic, as no small debris can get inside.

Taking care of your knife:

Knives should not be put in the dishwasher. It should be washed by hand in lukewarm water, using a sponge and a mild detergent. Once washed, wipe with a soft cloth to remove all traces of moisture, then store.

Finally, please note that quantities are limited due to the provenance of the knives and the capacity of the blacksmith, who carries out all the manufacturing stages by hand.

This knife is delivered in an attractive wooden box.
