As for performance, we leave it to you to make a single cut to judge for yourself!
A top-of-the-range kitchen knife
The Wusaki Damascus 10Cr knife is available in several unique models, to satisfy both professional and private users with a wide range of functions.
This 9cmparing knife features a blade with a 10Cr15CoMoV stainless steel core. This top-of-the-range steel already enjoys a fine reputation in cutlery shops the world over for its long-lasting strength and the quality of its cutting edge (it is capable of withstanding a "razor" finish). Its carbon content is close to 1.05%, giving it an excellent hardness of around 60 HRC on the Rockwell scale. Such a core helps avoid repeated sharpening.
The core is then sandwiched by 67 layers of damascus. This is a unique method of superimposing various layers of steel (alternating hard and soft) around the blade core. The hard steel consolidates the knife's already acquired solidity, while the soft steel gives it a slight suppleness (making it less brittle, without making it flexible). Beyond its technical advantages, damascus creates unique patterns on each knife: they undulate over the cutting surface, for an incredible visual effect.
The upper part of the blade has been hammered, creating unique patterns on each blade. In addition to its aesthetic appeal, hammering is recommended to increase the knife's non-stick properties (in the manner of honeycombing).
The left-hand side of the blade has been laser-engraved with the brand and range names, for even greater authenticity. The cutting edge has been cut in a V-shape for excellent, effortless penetration of food (so as not to break the internal fibers). Final sharpening is done by hand, on a strip of leather at a cumulative angle of 30° (i.e. 15° on each side). The result is formidable: you'll feel it from the very first use!
Finally, the blade has a mirror-polished finish, which adds to its cachet, while also making it more resistant to corrosion (as polishing flattens the steel and makes it less porous).
The handle is an essential feature of the Wusaki Damascus 10Cr. It is made from olive wood, which has been sanded and treated to give a pleasantly soft feel. This noble wood, with its characteristic fruity scent, contrasts with the metal of the blade.
The veins that can be seen on its surface are unique, on every knife: prestige guaranteed!
Each handle is unique! Colors, patterns and grain can vary according to the parts of the wood used to make the handles. Some parts are darker than others, depending on the knots in the wood, for example. This is perfectly normal.
The handle has been cut into an original sickle-like shape, to make it comfortable to grip and to fit naturally into the palm. In this way, the thumb and forefinger maintain good strength during use, for firm control of the knife. Last but not least, Wusaki handles are a little longer than the current cutlery market average, so they can be handled by all cooks.
Finally, the base engraved with the Japanese"Tiger" sandblasted character gives the knife a perfect finish, and the three red edgings add an unmistakable note of elegance.
How to store and care for your paring knife
The Wusaki Damascus 10Cr knife is a masterpiece of cutlery: the combination of materials and colors makes it an exceptional piece. Simple yet slightly sophisticated, it will seduce the most uncompromising of cooks.
This Wusaki knife comes in a high-quality black box that protects it from knocks. The elegant box makes it easy to give as a gift!
For maintenance, we recommend gentle hand-washing in lukewarm water with a mild soap. You can then wipe the knife with a soft cloth and store it in a dry place. When washing, try to keep the handle as dry as possible, as wood doesn't like to get wet. From time to time, you can also wipe the handle with a soft cloth soaked in olive oil, to add shine and protection.
Please note: on delivery, the knife blade is lightly coated with protective oil. Simply wash before 1st use to remove.
The Damas 10Cr olive wood range is incompatible with magnet bars due to the depth of the hammering and the weight of the knives. Instead, store your knives in a block or Bag!
