The Wusaki Fujiko 10Cr 3-piece knife set is a must-have for all cooks! Containing a 9cm paring knife, a 12cm utility knife and a 20cm chef's knife, it's your daily companion in the kitchen. Chopping, mincing and mincing all kinds of food is easy to do, while ensuring that the food is not too hard. Bones, fish bones and cheese wheels are the only exceptions to the use of the knives in this set.
Focus on efficiency and handle design
Your Fujiko Wusaki knives featureolive wood handles, a species with a distinctive fruity scent and marked veining, unique to each knife. Wood is a living natural material. Olive wood has been sanded and then treated for a soft, pleasant feel. Olive has many other advantages, such as good resistance to humidity and a density that makes it much less susceptible to warping.
The shape of the handles is slightly curved, so that they fit intuitively in your hand. What's more, it's suitable for both right-handed and left-handed users.
The central mosaic rivet is the handles' original touch: it has been affixed to the center of the olive wood.
Each knife has a stainless steel base designed to give it good overall balance in the hand. They are engraved with the Japanese character "Tiger". This gives each knife an ideal finish.
A red border adorns both ends of the handles, and a stainless steel bolster joins the blades and handles.
Efficient, high-carbon blades
These wusaki knives feature a superb damascus blade. This means that they have been made with a fairly rigid core that has then been enveloped in a more or less substantial number of other, softer steels. The advantage of this process is a more balanced blade. The rigid core ensures a sharp cutting edge that holds up well over time, while the top layers of mild steel adjust its hardness to make the knife less brittle in use: indeed, the stiffer a wire, the more brittle it is. The advantages of both steels combine to give you the best possible blade!
The 3 knives in your Wusaki set have a 10Cr15CoMoV stainless steel blade core. This is an interesting alloy because it has been enriched with carbon, reaching around 1.05%, when the average for Western knives is around 0.5%. This high carbon content gives the blade a hardness of 60 HRC on the Rockwell scale: long-lasting sharpness and efficiency guaranteed.
Chromium is present in steel to the tune of 15%, and is the element that counteracts corrosion. Thanks to chromium, your knives are said to be rustproof, provided of course that they are used and cared for in the usual way.
Next, the core is surrounded by several layers of softer steel that form the damascus. This balances the hardness imparted by the core, so that your knives feel "softer" when you use them. Damascus brings a unique style to knives, in addition to its real contribution to quality in structural terms. The superimposed steels form ripples on the surface of the blades, giving them great character! Damascus is unique to each knife.
A mirror-polished finish has been applied to the knives, adding to their cachet while offering greater resistance to corrosion (polishing flattens the surface of the steel and makes it less porous).

Your 3 Wusaki knives come with a specially designed case to protect them from damage: the case features a crouching Sumo. Thanks to the box, you can store your knives safely or give them as a gift to a knife enthusiast.
We recommend washing your knives by hand, using lukewarm water and a mild detergent. You can then wipe them dry and store them in a dry place with no trace of moisture. When cleaning, take care to keep the handles as dry as possible, as wood is not very fond of water. In fact, you can occasionally wipe the wood with a cloth soaked in olive oil to give it a shine and protect it. Of course, don't put your knives in the dishwasher, or leave them to soak in the sink.
The knives are made in Western China, in Guandgong, the most famous province in the world for the manufacture of knives and cutting tools. The manufacturers there have enjoyed a fine reputation in this field for decades.
