The Wusaki Fujiko 10Cr 2-piece knife set is ideal for everyday use! It includes a 20cm chef's knife and a 9cm paring knife for a wide range of foods: fruit, vegetables, meat (boneless), fish (boneless), herbs... Chop, slice and mince with ease.
Highly efficient carbon-enriched blades
Your Wusaki knives are both equipped with a damascus blade. They have been designed with a fairly rigid steel core which has then been surrounded by more or less numerous layers of a softer steel. Damascening is a process that ensures a more balanced blade. The rigid core gives you a razor-sharp edge that lasts, while the top layers of softer steel balance the hardness of the core to prevent the knife from breaking too much during use (the stiffer a wire, the more sensitive it is to shocks). You benefit from the advantages of two steels!
Both the chef's knife and the paring knife have a blade core made of 10Cr15CoMoV stainless steel. This is an interesting alloy because it has been enriched with carbon. It contains around 1.05% carbon, whereas the average for Western knives is around 0.5%. This high carbon content gives the alloy a hardness of 60 HRC on the Rockwell scale: this means that its cutting edge lasts a long time and cuts efficiently.
The steel has a chromium content of 15%, the element that fights corrosion. Your knives are therefore rustproof, provided they are used and maintained correctly.
The core is then surrounded by several layers of a softer steel: this is what forms the damascus. These layers balance the rigidity of the core, so that your Wusaki knives are "softer" when cutting. In addition to a truly qualitative contribution to blade structure, damascus gives knives a unique design. The superimposed layers of steel form waves on the surface of the blades, giving them a great deal of character. Note that damascus is unique to each knife.
Finally, the blades have a mirror-polished finish to give them even more cachet, while ensuring greater resistance to corrosion. Polishing smoothes the surface of the steel, making it less porous.
Efficient and elegant handles
Your wusaki fujiko knives are fitted with a handle made from sanded and treated olive wood, for a soft, pleasant feel when used. The wood has a distinctive fruity scent and superb veins, which are unique to each knife. Wood is a living material. Olive wood also offers a number of advantages, such as its density, which makes it less susceptible to warping, and its excellent resistance to humidity.
The shape of the handles is slightly curved to fit naturally into your palm. Suitable for both left- and right-handed cooks.
A magnificent central mosaic rivet has been affixed to the center of the olive wood, adding a lovely touch of originality.
The handle base is made of stainless steel, ensuring good balance when the knives are in your hand. The Japanese character "Tiger" has been engraved on the bases to finish off the knives elegantly.
Note also that a red border is visible at each end of the handles, and that a stainless steel bolster links the blades to the handles.
Your 2 Wusaki Fujiko knives are delivered in a superb case with a well-thought-out design to protect them from shocks. The box features a drawing of a crouching Sumo, so you can give it as a gift to a knife enthusiast, or simply use it to store your knives when you're not using them.
We recommend washing your knives by hand, under lukewarm water with a mild detergent. Then wipe the knives dry and store them in a dry place, free from all traces of moisture. Try to keep the handles as dry as possible, as wood doesn't like contact with water. You can also occasionally wipe the handles with a cloth soaked in olive oil to protect them and give them a shine. Dishwashing and soaking in the sink are obviously not recommended.
Your knives are made in Western China, in the province of Guangdong. This province is the most renowned for the manufacture of cutting tools and knives. The manufacturers there have enjoyed a fine reputation in this field for several decades.
