The MAC Professional range has been developed to meet the demands of chefs who need to work quickly but with precision. These knives are sharp and ergonomic. They save you time in the kitchen while remaining pleasant to handle, even over time.
This set contains :
- 1 universal knife 12.5cm: a small model ideal for peeling and cutting fruit and vegetables;
- 1 20cm chef's knife with honeycomb design: a versatile knife suitable for cutting many types of food, such as boneless meat, fish, vegetables... This particular model is considered to be today's best kitchen knife, according to a study by the American website Wirecutter, picked up by the newspaper Le Monde in November 2018. Among other things, it was after 120 hours of research and numerous discussions with chefs and experts in the field that the knife was voted the big winner of this test. Its incredible edge holds up over the long term and is easily maintained when the need arises. It's also very comfortable in the hand, to ease your movements and reduce fatigue over the long term. The perfect knife for professionals!
Blade :
Made of AUS-8 stainless steel, an alloy enriched with carbon, tungsten, molybdenum and vanadium.
On the one hand, carbon and tungsten are 2 important elements that influence the blade's rigidity. The greater their presence, the stiffer the blade! What's more, a rigid blade holds its cutting edge more durably, allowing you to work it more thoroughly to make it razor-sharp.
Molybdenum and vanadium also have a slight impact on rigidity. Vanadium increases the alloy's elasticity and thus its impact resistance, while molybdenum increases the steel's corrosion resistance.
As a result, the steel used in MAC Professional knives is durable and offers excellent cutting performance. It's an alloy that's easy to work with and therefore easy to maintain with a whetstone.
The cutting edge of these knives is also hybrid, i.e. it combines a Japanese angle (unilateral) and a Western angle (symmetrical). This particular angle gives the knives the perfect combination of fearsome sharpness and longevity. The final sharpening of these knives is done by hand on a water stone. The craftsman's skill is evident from the very first use, where you can enjoy a true razor-sharp edge.
Handle:
The handle consists of two pakkawood plates fixed by rivets to the full tang blade. Pakkawood or pakka wood is a composite material combining laminated wood and resin compressed under heat. This material is therefore resistant to humidity, shock and temperature variations.
A steel bolster links the blade to the handle. The overall shape of the knives is worked in such a way as to ensure a perfect grip for optimum comfort during use.
How do I care for my knives? Hand-wash in lukewarm water with a soft sponge. Dry immediately with a soft cloth, leaving no trace of moisture on the surface. In this way, you'll retain their original performance and appearance for a long time to come.
Brand history :
MAC is a Japanese knife manufacturer based in Seki, a Japanese town renowned for its quality cutlery production since the Middle Ages.
The brand was created in the 60s after its founder studied in the USA, where he worked as a part-time cook in addition to his studies.
During this period, he had the opportunity to test several kitchen knives that were not necessarily to his taste. As an anecdote, he was using a heavy, very sharp, blunt German knife when he dropped it on the floor, narrowly missing planting it in his foot. Instead, the knife stuck in the ground and about 3cm of the point had broken off. To fix this, he decided to repair his knife with a whetstone, making the point "rounder". Gradually, he noticed that this modification had significantly increased the knife's efficiency, and with it his own output.
On his return to his homeland, this experience inspired him to found the MAC company, with the aim of producing knives with a formidable cutting edge that were safer, longer-lasting and easier to use. The brand now boasts several patents to its credit, and is known the world over. For the record, the name MAC comes from the word "Macrocosm", which in simplified terms means "immense universe" (reflecting the founder's ambition to equip every country in the world with his knives). He chose to retain the first 3 letters of the word.
