Choose this Misono 440 Universal knife, one of the benchmark ranges for professionals in the catering trade!
The name of the 440 series comes from the alloy used, 440C. It's a stainless steel similar to VG10, but enriched with molybdenum and chromium. This means it will resist oxidation really well (with standard use and maintenance). This is one of the reasons why it is so widely used in the professional sector.
The blade of this 12cm Universal knife will be with you for a long time. It features an asymmetrical cutting angle, for clean, precise cutting without damaging food.
With a hardness of 58/59 HRC on the Rockwell scale, its cutting edge will be with you for a long time. Note, however, that due to its special composition, it takes a little longer to sharpen when the need arises (this is notably due to its chromium content, which on the other hand makes it much more resistant to oxidation, as previously mentioned). It can be sharpened with a Sharpening stone.
The brand and range logos have been applied to the blade.
The knife's handle is also designed to make your work pleasant. Both the shape and materials are interesting and suitable for use by Western chefs, which is why they can also be used all over the world.
Made from lightweight black Pakkawood, it's very comfortable in the hand, allowing you to use it over time without tiring. It's a robust blend of wood and resin. Pakkawood is an antibacterial composite material widely used in the kitchen for its resistance to temperature variations and humidity.
The slightly recessed shape of its base allows you to grip and handle it with control, whether you're right- or left-handed. 3 stainless steel rivets hold the handle to the full tang blade (which extends to the end of the handle). The weight of the bolster balances the whole piece.
For maintenance, we recommend manual cleaning with a soft sponge and washing-up liquid. Wipe dry thoroughly before storing in your block, Bag or magnet bar.
Its timeless design is sure to please!
The Misono brand:
Misono was founded in 1935, in the town of Seki (renowned for its knifemaking expertise for many years). Although the family business initially produced specialized blades for peelers, in the 1960s it diversified into the creation of kitchen knives.
Today, Misono is considered Japan's oldest manufacturer of Western-style knives, employing some 50 experts and producing 150,000 knives a year. It's worth noting that Misono carries out 100% of the manufacturing stages, from blade to handle design (whereas many producers of this size have certain parts of their knives made by other, more specialized companies).
The company's knives are inspired by the techniques of Japanese master blacksmiths. In fact, several stages are carried out entirely by hand by their experts.
Choose Japanese excellence for your daily kitchen tasks with Misono knives!
