This Fukito Pakka San Maiparing knife is a handy little knife for everyday use! In fact, it's one of the kitchen essentials. It's particularly useful for peeling and cutting small fruits and vegetables. In fact, it allows you to work with precision.
The blade is based on a San Maï structure. This means it's built from a rigid alloy core, which itself is surrounded by a layer of softer steel to balance and protect it. The blade is thus more resistant, the components of the different alloys being complementary. The superimposition of steels on the bottom of the blade is also noticeable, with the fine wave running along the cutting edge.
The core of the knife is made of a stainless steel, 10Cr15CoMoV, which is similar to VG10 steel. Like VG10, it has a high chromium and carbon content:
- Chromium: the final content is 15.5%, which helps combat corrosion,
- Carbon: the final content is 1.05%, which improves the steel's rigidity, so that it holds its edge better even after repeated cutting. The result is a hardness of +-60HRC on the Rockwell scale,
Around the core is a layer of softer steel to protect it. The latter is also stainless.
The blade features a special heat treatment. This was carried out in a vacuum. During standard heat treatment, certain elements in the air (hydrogen, oxygen, etc.) can react with the metal. The fact that this takes place in a vacuum creates a protected atmosphere to keep all the alloy's components intact.
A stainless steel bolster links the blade to the handle. Its polished surface ensures a natural grip with every use. The handle is suitable for both right- and left-handed users.
Finally, the blade has an attractive satin/fluted finish on both sides.
The handle of this knife is made of highly resistant Pakka (or Pakkawood). Pakka wood is in fact a composite material composed of both laminated wood and resin, which are hot-pressed. It's a material that will stand up well to the effects of humidity and possible knocks.
An elegant mosaic rivet in the center of the handle adds an exotic touch to the knife. The light Pakkawood color contrasts nicely with the satin-finish blade, and a red/gold border links the two.
A stainless steel base finishes the handle and balances the knife's weight.
We recommend hand-washing with a sponge and mild detergent. Once the knife is clean, wipe it dry immediately to remove all traces of moisture and store it. Do not use the dishwasher or soak the knife in the sink.
