This Cerax whetstone is part of a range of stones fired at very high temperatures, making them more resistant to the risk of cracking. This series is therefore durable, and the stones are also very easy to use.
Its #800 grit is considered slightly thick to medium, so it is recommended for knives that have lost some of their sharpness, as it helps to roughen the cutting edge.
To use:
It should be soaked 5 minutes before use. You can reapply water to the surface of the stone during sharpening, when you feel it's necessary. You can do this directly by hand, or with a pipette for even greater precision.
After a few moments' use, a small colored sludge will form on the surface of the stone, and this is perfectly normal. This "sludge" is even essential, as it helps to sharpen the knife, so it should not be cleaned during the sharpening process.
When you've finished, you can rinse the surface and clean it with a small, soft brush. Wipe it with a dry cloth, then leave it to dry in a room at room temperature (keep it out of the sun so that it dries faster).
Practical accessories supplied with the stone:
A small white Nagura stone (7.2 x 1.7 x 0.9 cm) is supplied with the main stone. It can be used to create the famous mud beforehand.
Note that the #800 grain stone is glued to a white base to stabilize it during use.
It also comes with a box that can be used for storage, as a sharpening stand when in use, or as a small basin for soaking the stone before use. The box also has a space for the Nagura stone. Its black feet are removable.
Please note: the stone's dimensions may vary by a few millimetres, and its weight by a few grams, which is perfectly normal.
