A few words about the manufacturer:
Suehiro, experts in professional sharpening stones, develop practical, long-lasting stones that even novices can enjoy using!
The Japanese manufacturer manages every stage in the creation of its stones, from R&D to actual production.
To help you understand, here are the different manufacturing stages:
- Mixing and stirring ingredients in vats
- Press-mold each stone into its final rectangular shape
- Leave to dry for a short time
- Bake to set
- Make the final cast by hand (a craftsman passes the stone over a grinding wheel to ensure a clean finish)
- Quality control before packing the stones into the bundles
Model:
This Cerax whetstone is fired at very high temperatures, making it more resistant to the risk of cracking. It's a durable whetstone, and also very easy to use.
Its #5000 grit is considered very fine, so it's recommended for polishing the edge, as a finishing stone that brings out a knife's full potential.
To use:
It should be soaked for 5 minutes before use.
It is possible to reapply water to the surface of the stone during sharpening, when you feel it is necessary. You can do this directly by hand, or with a pipette.
After a few moments' use, you'll notice a small colored sludge forming on the surface of the stone, and this is perfectly normal. This "sludge" is even essential, as it helps to sharpen the knife, so don't clean it during the process.
When you've finished, you can rinse the surface and clean it with a small, soft brush. Wipe it with a dry cloth, then leave it to dry in a room at room temperature (keep it out of the sun so that it dries faster).
Please note: the stone's dimensions may vary by a few millimeters, and its weight by a few grams, but this is perfectly normal.
To complement the stone:
A small white Nagura stone (7.2 x 1.7 x 0.9 cm) is supplied with the whetstone. It is used to create the famous slurry that facilitates the action of the stone. As already mentioned, it reinforces the abrasive power of the main stone, thus enhancing its performance.
The #5000 grit stone is glued to a white base to stabilize it when in use.
It also comes with a box that you can use for storage, as a sharpening stand when in use, or as a small basin for soaking the stone before use! The box also has a space for the Nagura stone, to prevent it getting lost. Its black feet are removable.
