Description

The kiritsukeUniversal knife is a must-have for your kitchen! Its small blade lets you perform precision work on a wide range of foods, including fruit, vegetables and small pieces of meat. Its kiritsuke-shaped tip gives you even greater precision! Be careful not to use it on too hard foods such as squash, bones, etc.

Sakai Takayuki, founded in the middle of the 20th century, takes its name from the Japanese town where it was founded, namely Sakai. Backed by decades of experience, the company offers Japanese knives combining ergonomics and performance. Using techniques inherited from the blacksmiths of yesteryear combined with modern technology, this manufacturer offers you long-lasting knives with a design that subtly blends modernity and tradition.

A durable, high-performance damascus blade

The blade of your Japanese knife measures 12cm and features an unusual structure, making it a remarkable knife! It has a damascened blade but no core: in fact, 70 layers of steel are superimposed one on top of the other. The outer layers are not, therefore, soft steel layers to protect the core, since they are used directly and alternately to form the blade.

The major advantage of this "coreless" structure lies in its micro-structure. With this method, the micro-carbides that make up the steels, and therefore the damascus, are evenly distributed to give a cutting edge that performs better and lasts longer, since it is resistant to deformation.

Japanese steels VG10 and VG2 are used here, both produced by Takefu Special Steel. They contain, respectively, around 1% and 0.7% carbon: this is the essential element that increases a blade's hardness.

These alloys also contain around 15% chromium for greater resistance to corrosion. However, their high carbon content means that the blade remains oxidizable: it must therefore be carefully maintained to avoid any risk of corrosion.

The different steels balance each other out to create a high-performance blade for optimal cutting performance! Its hardness is 60HRC on the Rockwell scale, proof that its cutting edge is effective and durable. So you can space out your sharpening sessions!

This coreless damascus blade lets you enjoy the benefits of both steels at the same time: your blade is rigid and its cutting edge is remarkable and long-lasting!

As well as being practical, damascus is also a real visual advantage! You can see the superimposition of different layers of steel all over the blade's surface. Fine, random waves form unique patterns that lend elegance to your Japanese kitchen knife!

Quality micarta handle

The handle of this damask knife is made of black micarta, a strong, durable material that is resistant to moisture. This composite material is made from resin and linen, all compressed under high tension. The result is a natural, wood-like grain pattern.

This Japanese knife has a Western shape and a finger rest at the heel. This gives you an ergonomic, comfortable grip for perfectly controlled handling, particularly during prolonged use. Its shape is equally practical for right-handed and left-handed cooks!

The full tang blade is securely fixed in the handle by two rivets. So your Universal knife is reliable and safe to use!

To care for your damask knife, wash it exclusively by hand with a non-abrasive sponge and mild detergent. Once cleaned, wipe dry immediately to remove traces of moisture and store in a dry place. Do not use the dishwasher or leave it to soak in the sink.
