Description

An inspired profile for technical cuts

The Wusaki Sakin kiritsuke is distinguished by its distinctive silhouette, thanks in particular to its angular tip. This shape allows you to approach cutting with precision, particularly for finishing or gestures requiring meticulousness. With its 20cm blade, it offers good length for working comfortably on the board, while retaining great control. This format allows you to alternate between wide gestures and more precise cuts.

This type of knife is ideally suited to slicing, dicing or fine-tuning preparations. It comes in a practical storage case for protection or gift-giving.

Geometry designed for precision and regularity

The 20cm blade combines working surface and control. It can handle different types of food, while maintaining good precision on fine cuts.

It has a core of 10Cr15CoMoV stainless steel, containing around 1.05% carbon. This composition gives the blade an efficient cutting edge, capable of making clean, even cuts. It has a hardness of almost 60 HRC, ensuring good edge retention over time.

It is covered by a damask structure of 67 layers of steel, which reinforces the whole and creates visible wavy patterns. This construction adds stability to the blade.

The kiritsuke tip provides an added advantage for precision work, especially when finishing or making fine cuts. Theflat tip ensures direct penetration of food, for smooth, precise cutting.

A grip adapted to mastered gestures

The handle of the kiritsuke knife is made of resin into which carbon fibers and gold leaf nuggets are injected. The term Sakin, which translates as "gold dust", refers to these visible inclusions in the material.

The resin is known for its stability and resistance to humidity, making it ideal for regular use. It also ensures a comfortable grip. Carbon fiber reinforces the structure of the handle, while gold flakes create a unique aesthetic. Each knife has a slightly different appearance.

The handle's bevelled Western shape ensures a natural grip and good control. Two stainless steel rivets and a central brass mosaic rivet ensure a solid hold. The stainless steel bolster reinforces the junction with the blade, and the stainless steel base contributes to the overall balance.

Practical tips for long-lasting use

Always wash your kiritsuke damascus steel knife by hand with a soft sponge and standard soap. Do not use a dishwasher, as this will damage the materials. Wipe the blade immediately after cleaning to avoid any traces of moisture. Use your knife on a synthetic or wooden cutting board to preserve the quality of the edge.

When the cut becomes less sharp, sharpening with a stone with a grain suitable for 10Cr steel will restore good performance. Store your knife in its case, in a block or on a magnetic bar to avoid shocks.

Methodically supervised manufacturing

Wusaki knives are designed in a workshop located north of Guangzhou, in the Guangdong province. This region is historically linked to the production of cutting tools, providing a suitable setting for this type of manufacturing. Production is based on a structured organization, with careful monitoring of all stages and rigorous selection of the materials used.

Knife development is based on French manufacturing standards established for professionals in the sector, to ensure consistency in design and performance.
