This Fukito Pakka San MaiUniversal knife allows you to vary your cuts while remaining very pleasant to handle. Its medium size makes it ideal for cutting fruit and vegetables, but it can also be used to mince small pieces of boneless meat. In short, it's versatile and suitable for all cooks.
Each Fukito knife is made in the Guangdong province of Western China. For decades, this region has been historically associated with knife-making. The techniques and materials chosen for Fukito knives meet the manufacturing standards of French professionals.
Technical details on the blade :
The blade is based on a San Maï structure. This means it is built from a rigid alloy core surrounded by a layer of softer steel to balance it out. The blade is thus more resistant, the components of the different alloys being complementary. You can see the superposition of steels on the cutting surface.
At the heart of the knife is a stainless steel, 10Cr15CoMoV, which is similar to VG10 steel. Like VG10, it has a high chromium and carbon content:
- The final carbon content is 1.05%, which improves the steel's rigidity, so that it holds its edge longer. The result is a hardness of +-60HRC on the Rockwell scale,
- Chromium: the final content is 15.5%, to combat corrosion,
Around the core is a layer of softer steel to protect it. The latter is also stainless.
The blade is also heat-treated in a special vacuum. This process is advantageous, as in the case of standard heat treatment, certain elements present in the air (hydrogen, oxygen...) can react with the metal. The fact that this takes place in a vacuum creates a protected atmosphere to keep all the alloy's components intact.
A stainless steel bolster links the blade to the handle. Its polished surface ensures a natural grip with every use. The handle is suitable for both right- and left-handed users.
Finally, the blade has an attractive satin/fluted finish on both sides.
Technical details on the handle :
Designed in Pakka (or Pakkawood), it is highly resistant. Pakka wood is actually a composite material combining laminated wood and resin, which are hot-pressed together. As a result, the handle is better able to withstand shock and humidity.
An elegant mosaic rivet in the center of the handle adds an exotic touch to the knife. The light Pakkawood color contrasts nicely with the satin-finish blade, and a red/gold border links the two.
A stainless steel base finishes the handle and balances the knife's weight.
