Blade :
Its structure is called San Mai, which means it's made up of 3 layers: a rigid core surrounded by a layer of softer steel that protects it. The blade is more balanced and resistant. This superimposition of steels is visible on the bottom of the blade with the small wave that runs across the entire cutting surface.
The center of the knife is made of 10Cr15CoMoV stainless steel, which is very similar to VG10 steel. Like VG10, it has a high chromium and carbon content, which enhances its capabilities.
Its 1.05% carbon content enhances the steel's rigidity, ensuring a long-lasting cutting edge. Hardness is therefore +/- 60 HRC on the Rockwell scale. The 15.5% chromium content improves corrosion resistance.
This core is then surrounded by a layer of softer stainless steel to protect it.
Note that this blade has been vacuum heat-treated. This process is advantageous because, in the case of standard heat treatment, certain elements present in the air (hydrogen, oxygen...) can react with the metal. The fact that this takes place in a vacuum creates a protected atmosphere so that the blade retains its full potential.
A stainless steel bolster links the blade to the handle. Its gently sloping surface makes for an easy, natural grip. The blade has a satin/fluted finish on both sides.
Handle:
Made from pakka wood (or pakkawood), a composite of laminated wood and resin hot-pressed together. The result is a perfect blend for the culinary milieu, since pakkawood is resistant to shock and humidity. A mosaic-shaped rivet in the center of the handle adds a touch of originality to the knife.
The light-colored handle contrasts with the satin-finish blade. The red and gold edging links the two.
A stainless steel cap finishes the handle and balances the knife's weight. The handle is suitable for both right- and left-handed users.
How to care for the knife We recommend hand-washing with a sponge and mild detergent. Once the knife is clean, wipe it dry immediately to remove all traces of moisture and store it. Do not use the dishwasher or soak the knife in the sink.
