This Fukito Pakka San Maisantoku knife is an ultra-versatile model for slicing vegetables, meat and fresh herbs! It acts like a chef's knife. Its with granton edgeblade makes the cutting surface less sticky. In fact, micro air bubbles are created between the food and the blade, in the hollows, so that food sticks less to the steel.
The blade has a San Maï structure, meaning that it is built on 3 layers: a rigid core with a layer of softer steel on top to protect it. The result is a more balanced, stronger alloy. The superposition of steels is also visible on the bottom of the blade, as seen in the randomly patterned wave near the cutting edge.
The heart of the blade is made of 10Cr15CoMoV stainless steel, which is very similar to VG10 steel. In fact, like VG10 steel, it has a high chromium and carbon content to enhance its performance:
- Carbon (1.05%) has a direct impact on the steel's rigidity, so that it holds its edge over the long term. The result is a hardness of +-60HRC on the Rockwell scale,
- Chromium (15.5%) improves resistance to oxidation, among other things,
This core is then sandwiched by a soft stainless steel for added protection.
For an impeccable finish, the blade is vacuum heat-treated. This is an advantageous process, as in the case of standard heat treatment, certain elements present in the air (hydrogen, oxygen...) can react with the metal and reduce the capacities of the elements. The fact that this takes place in a vacuum creates a protected atmosphere: the blade thus preserves its full potential.
A stainless steel bolster links the blade to the handle. Its gently sloping surface makes for an easy, natural grip.
Finally, the blade features an attractive satin/fluted finish on both sides, for an unprecedented effect!
The handle is made from Pakka wood (or Pakkawood). This composite material combines laminated wood and resin, all hot-pressed together. The result is perfect for the kitchen environment, as it is shock and moisture resistant. An elegant mosaic rivet in the center of the handle adds an exotic touch to the knife. The luminous shades of Pakkawood contrast nicely with the satin-finish blade, and a red/gold border links the two.
A stainless steel base finishes the handle and balances the knife's weight, making it a natural to use. The handle is suitable for both right- and left-handed users.
