This double-sided stone gives you greater efficiency and space. Each of the 2 sides corresponds to a different sharpening stage, for efficient blades!
- Face 1000, medium grit for most blades
This face is perfect for blades with a hardness between 53 and 59 HRC. Its versatility enables it to give a finish to low HRC blades and is an excellent starter for high HRC blades. This grain is effective without removing too much material. It prevents your blades from becoming dull, but doesn't damage them. Quite simply, it's the most widely used grain for sharpening!
- Face 3000, a fine grain for a better finish
The fine grit on this face refines the cutting edge of medium HRC blades (56 to 59). It polishes the edge, enhancing the efficiency of your blades. They will glide through food without tearing. This side is also used to maintain high HRC blades (60 to 62). In this case, you will still need to complete the sharpening with a finer-grain stone (8000 to 12000).
The base supplied with this double-sided stone guarantees stability and safe use when maintaining your blades.
Recommendations for use :
- Soak the stone until there are no more bubbles (approx. 15 minutes).
- Place the stone on its base to stabilize it.
- Sharpen your knife with the angle corresponding to its type (santoku, deba, universal...)
- After sharpening, clean and dry the stone, storing it in a dry cloth to prevent cracking
For a long-lasting stone, we recommend :
- Do not leave the stone to soak for too long, as this may weaken it and make it less effective.
- Do not leave stone exposed to sunlight or dry it with a kiln, as this may cause cracks to appear.
