A high-performance, elegant damask knife
This Grand Chef Seigaiha 24cm Sakai Takayuki chef knife is designed for cooking enthusiasts looking for performance, strength and aesthetic appeal. It is made in Seki, a Japanese town renowned for its excellence in cutlery, and perfectly embodies the combination of ancestral tradition and quality materials.
The blade features the Seigaiha motif, an ancestral design that first appeared in 6th-century Japan. It originally illustrated the seas and oceans on nautical charts. "Seigaiha" means "blue sea and waves" and symbolizes peace, strength and continuity. The damask pattern visible on the blade is a modern interpretation of waves on the high seas, giving each knife a unique and meaningful visual.
A versatile knife for many ingredients
This Sakai Takayuki Japanese chef's knife features a 24cm blade. It is perfect for slicing, dicing, chopping or chiseling large pieces of meat, vegetables or herbs with fluidity.
The blade core is made of Swedish Böhler stainless steel, a pure, highly stable alloy. It is enveloped by 44 layers of stainless steel, forming a 45-layer damascus. This structure guarantees the perfect combination of flexibility, strength and cutting performance.
Theflat wirecut optimizes cutting precision, while the hardness of around 60 HRC guarantees excellent edge retention, even under intensive use. The mirror polish applied to the blade brings out the Seigaiha pattern while improving food glide for clean, crisp work.
A hybrid Pakkawood handle
The 11cm handle is made of black Pakkawood. This is a composite material made from laminated wood and hot-compressed resin. It is durable, moisture-resistant, pleasant to the touch and stable in use.
Its shape is hybrid: it starts out oval near the bolster, following Western ergonomics, for gentle support. Moving towards the heel, the handle becomes octagonal, in reference to Japanese tradition, for a firmer, more precise grip.
A stainless steel bolster and heel reinforce the handle's solidity while ensuring perfect balance, making long cuts more comfortable and less tiring. The shape of the handle and the sharpness of the blade make this knife ideal for both right- and left-handed users.
