Description

Japan Kanetsune has developed its know-how around over 800 years of history and tradition, and the latest innovations in the metalworking industry. All our knives are made in Japan's cutlery capital, Seki.

The versatility of this chef's knife will enable you to make many of your cuts!

It features a long 27cm blade in 2N steel. This steel has a high carbon content, giving it an excellent cutting edge. Reaching a hardness of 59-60HRC on the Rockwell scale, this blade will retain its sharpness for a long time. This means less frequent sharpening sessions. Your cuts will be efficient and long-lasting.

It should be noted, however, that a carbon steel blade requires special care. This blade is sensitive to corrosion, and if not properly cared for, it will lose its effectiveness and stains will appear. To avoid this, wash your knife by hand, then dry it immediately afterwards, and store it away from moisture. Note that over time, the color of the blade may change. This is a normal reaction of steel (acidity of food, ambient humidity...).

The handle of this knife is made from plywood, a material obtained by superimposing several sheets of cross-stranded wood. This material is robust and absorbs little water. The handle is reinforced by 3 rivets that enclose the full tang blade in its center. The knife is balanced by the bolster, which provides the perfect link between the blade and the riveted handle. This combination of materials gives the knife a timeless design.

With this Japan Kanetsune chef's knife, you benefit from the high quality of Japanese products! Whether you're an amateur or a professional, it's just a few clicks away from being the perfect addition to your equipment!
