An efficient blade for all cuts
This santoku knife is the equivalent of the Western chef knife. Its 17cm blade can cut a wide range of foods, including meat, vegetables, fish and herbs. Be careful not to cut foods with bones or frozen foods, to avoid damaging the blade.
The blade is made of stainless steel enriched with molybdenum and vanadium, which increases its resistance to shock and corrosion. Thanks to these elements, the alloy has a hardness of 57 HRC on the Rockwell scale, giving you a Satake knife that's both easy to sharpen and long-lasting.
When necessary, you can stone-sharpen your knife or sharpen it more regularly with a sharpening gun to preserve its optimum edge. This hardness represents a good compromise between cutting efficiency and ease of maintenance.
Your santoku knife has been laser-sharpened to guarantee immediate use as soon as you receive it. The upper part of the blade has a hammered finish, called Tsuchime, which reduces the adherence of greasy or moist foods. It has also been polished and engraved with kanji, for a look that is both elegant and authentic.
Oval handle for an ideal grip
This santoku features an oval handle, a shape that fits perfectly in the palm of your hand. It's an ergonomic shape that ensures great comfort during cutting, making this knife an ideal choice for prolonged sessions, as the sensation of fatigue is reduced.
The handle is made from magnolia wood, a precious wood distinguished by its light, cream-like hue. Traditionally used for Japanese sword scabbards, this species is appreciated for its lightness, softness to the touch and resistance to humidity.
The handle is completed by a black synthetic bolster, which joins it to the blade. The bolster is designed to give your knife optimum balance.
To clean your Satake knife, use only a non-abrasive sponge to hand-wash it. Dry it immediately after cleaning and store it in a dry place. Do not soak it in the sink, and never put it in the dishwasher.
