A blade for easy cutting of fish fillets
This sashimi knife features a long, narrow 21cm blade that glides easily through the fish to cut it with great precision. The blade is asymmetrical, i.e. sharpened on one side only, to cut fish fillets with finesse. The one-sided cutting edge also makes the knife ideal for right-handed cooks.
The blade is made of stainless steel reinforced with molybdenum and vanadium, an alloy offering superior resistance to shock and corrosion. These elements increase the alloy's hardness, reaching 57 HRC on the Rockwell scale, guaranteeing a Satake knife that's easy to sharpen while retaining a long-lasting edge.
When the need arises, you can sharpen your knife with a stone, or sharpen it regularly with a sharpening gun to maintain optimum sharpness. This hardness offers an excellent balance between ease of sharpening and cutting performance.
This Japanese knife has been laser-sharpened, enabling you to use it immediately upon receipt. The blade has been polished and features a hammered Tsuchime finish at the top, which reduces the adherence of wet or greasy foods. Engraved kanji add an authentic touch to the blade.
Ergonomic magnolia handle
The knife's handle is made from magnolia wood, a species prized for its light, creamy hue. This precious wood, often used to make scabbards for Japanese swords, is appreciated for its lightness, softness to the touch and resistance to humidity.
The oval-shaped handle fits perfectly in the palm of your hand. This ergonomic shape guarantees optimum comfort when cutting, making this knife suitable for long sessions and reducing fatigue.
A black synthetic bolster completes the handle and links it to the blade. This bolster ensures optimum balance for the knife.
To clean your Satake knife, wash only by hand with a soft sponge. Once washed, dry immediately and store in a dry place. Never soak it in the sink or dishwasher.
