Manufacturer Suehiro specializes in whetstones and sharpening utensils. Based in Japan, it develops accessories that are suitable for everyone, from professionals to passionate amateurs. Suehiro whetstones are renowned for their efficiency and durability. When you buy from Suehiro, you can be sure that your favorite kitchen knives will be well cared for, to reveal their full cutting potential.
This stone is part of the Debado series, a range of sharpening stones specially designed for large knives. Indeed, Suehiro Debado stones are much wider than average, and heavier. As a result, their surface area and stability are improved. So you can easily handle your sashimi knife, your chef's knife...
Please note: stone dimensions may vary by a few millimetres, and its weight by a few grams - this is perfectly normal.
The Debado MD-20 stone is designed according to the brand's original cooking process. As such, it contains no synthetic binder, and is highly resistant to wear.
Finally, there's no need to soak it for ten minutes before use. Non-absorbent, it just needs to be moistened before serving, saving you time.
After a few moments' use, you'll notice a small colored sludge forming on the surface of the stone, and this is perfectly normal. This "sludge" is even essential, as it helps to sharpen the knife, so don't clean it during the process.
After use, you can rinse the used surface and clean it with a small, soft brush. Wipe with a dry cloth, then leave to dry in a room at room temperature (keep out of direct sunlight for faster drying).
Its #200 grit is considered thick. It is therefore suitable for knives with dull blades that need to be thoroughly reworked. It enables you to rework the cutting edge to clean it of the micro-steel splinters generated by numerous cuts.
Complementary accessories:
A small Nagura stone is supplied with the main stone (7.3 x 2.3 x 1.8 cm). This small model is used to create the famous slurry that facilitates the stone's action. As already mentioned, this reinforces the stone's abrasive power, thus increasing its effectiveness.
A flexible silicone base is also supplied, enabling you to stabilize the stone during use. It's removable, so you don't have to use it if you prefer to place the stone on a cloth, for example.
All the above qualities make it particularly suitable for professional use!
