Technical specifications of the two knives
The blade
Both knives feature a blade with a 10Cr15CoMoV stainless steel core. This steel is already world-renowned for its excellent durability and cutting performance (which can be sharpened to razor-sharp precision). Its alloy is composed of around 1.05% carbon, giving it an excellent hardness of around 60 HRC on the Rockwell scale. Such a core ensures a long-lasting sharp edge, and avoids repetitive sharpening.
The core is then surrounded by 67 layers of damascus. Damascus is a unique process of skilfully superimposing various layers of steel (hard and soft) around the core of the blade. In principle, the hard steel reinforces the knife's strength, while the soft steel lends it a slight suppleness (making it less brittle without making it flexible). Damascus is also visually very pleasing, with waves rippling across the cutting surface for a breathtaking visual effect (and it's unique to every knife!).
The top of the blade has been press-hammered, creating unique patterns on each blade. Beyond its aesthetic appeal, hammering is appreciated for increasing the knife's non-stick properties (a bit like honeycombing).
You can see that the brand name and range have been laser-engraved on the blade, for even greater authenticity.
The cutting edges of these two knives have been worked into a V-shape, so that penetration into food is effortless (their fibers are not broken and their taste is respected). Final sharpening is carried out by hand, on a moving strip of leather. They are worked at a cumulative angle of 30°. The result is formidable: you'll feel it from the very first use - no need to force it!
The blade benefits from a mirror-polished finish, for an impeccable look, while becoming more resistant to corrosion (because polishing flattens the surface of the steel to make it less porous).
The handle
One of the Wusaki Damascus 10Cr knife's key assets is its handle, made from olive wood that has been sanded and treated to make it soft and pleasant to work with. This warm, noble wood, with its characteristic fruity scent, contrasts perfectly with the cold appearance of the steel. Its veins are unique on each knife: prestige assured!
Each handle is unique! Colors, patterns and grain can vary according to the parts of the wood used to make the handles. For example, some parts are darker than others, depending on the knots in the wood. This is perfectly normal.
It has been designed with an original, ergonomic shape, so that it sits naturally in the palm of the hand, increasing comfort. In this way, the thumb and forefinger can retain their full strength with every use, for absolute knife control.
Finally, Wusaki handles are slightly longer than the current cutlery market average, to accommodate larger hands.
The base engraved with the Japanese character"Tiger" adds an authentic finish to the knives. Its sandblasted appearance contrasts with the smooth surface of the steel. The three red edgings add an extra touch of elegance. Attention to detail!
Careful maintenance and storage
Wusaki Damascus 10Cr knives are little masterpieces: they combine materials and colors perfectly, to become exceptional pieces of cutting equipment. Simple yet slightly sophisticated, they're sure to please even the most demanding cook!
The box containing the knives is a beautiful , high-end black case. It has two slots for holding and locking the knives. This elegant case means you can give it as a gift without blushing!
For care, we recommend gentle hand-washing in lukewarm water, using a neutral soap. You can then wipe the knives with a soft cloth and store them in a dry place.
When washing, try to keep the handles as dry as possible, as wood does not like to get wet. From time to time, you can also wipe them with a soft cloth soaked in olive oil, to add shine and protection.
Please note: when you receive your knives, the blade is lightly coated with protective oil. Simply wash them before 1st use to remove it.
The Damascus 10Cr olive wood range is incompatible with magnet bars due to the depth of hammering and the weight of the knives. Instead, store your knives in a block or briefcase!
