This 9cmparing knife is a must-have for professional chefs and home cooks alike. It enables you to cut small fruits and vegetables with precision. Its thin, short blade can be inserted anywhere, to peel or even decorate their surfaces. Easy to handle, it's always useful in the kitchen!
Part of the Wusaki Pakka X50 range. All the knives in this incredible series are suitable for both professional and domestic use. They allow you to equip yourself at an exclusive price without compromising on quality! Performance, durability and ergonomics are all qualities that describe these knives. Added to this is an effective and authentic design, making them as pleasing to the eye as they are to use.
The German stainless steel blade has the following composition: X50CrMoV15. This professional steel is renowned for its durability and ease of maintenance (both sharpening and washing). One of its strong points is its 15% chromium content, which makes it resistant to corrosion. Its carbon content is 0.5% (for hardness), and it is also enriched with Molybdenum and Vanadium (for impact resistance and elasticity, to make it less brittle).
Its final hardness is 56/58 HRC on the Rockwell scale. This level of hardness is ideal for a good ratio between edge life and maintenance. For this, you can use one of the Wusaki stones we offer.
Note that the upper part of the blade is hammered with a mechanical press, creating unique, different patterns on each blade in the range. In addition to its elegant appearance, hammering is ideal for enhancing the knife's non-stick properties (in the manner of honeycombing).
The brand's logo is laser-engraved on the cutting surface, whose glossy finish adds cachet to the knife. The V-edge cutting edge is formed by a strip of leather at a 15° angle (cumulative 30°). Penetration of food is clean and effortless. Food is cut with precision, and its fibers are not broken or damaged. The knife's cutting quality is top-notch from the very first use!
The handle of this Wusaki knife is also an essential part to note. It is made of Pakkawood, a composite material much appreciated in culinary circles for its longevity and robustness. It is produced using laminated wood and resin, all hot-pressed together. The result resembles natural wood due to its unique grain. Pakkawood is not only antibacterial, but also resistant to changes in temperature and humidity (it is said to be rot-proof). It has been varnished for extra protection against moisture and stains.
Its simple, straight shape makes it comfortable to use for both right- and left-handed users! Its highly original red sheen highlights the blade's hammered steel, and the base engraved with the "Tiger" character in Japanese. Wusaki handles are a little longer than the current average, to be more comfortable to use whatever the size of your hand.
Last but not least, the Wusaki Pakka X50 knife's clean, efficient styling: the combination of materials and contrasts makes it an exceptional, timeless piece. It will charm the most demanding of cooks. Wusaki knives are manufactured by a small company located north of the city of Guangzhou, the capital of Guangdong province in Western China. This province is historically renowned for its knife-making expertise. Wusaki expertise is entirely governed by French manufacturing standards established for professionals in the sector.
The knife is supplied in a high-quality black case to protect it from shocks. The tiger-decorated box is very elegant and makes it easy to give as a gift.
For maintenance, we recommend gentle hand-washing in lukewarm water with a mild soap. You can then wipe the knife with a soft cloth and store it in a dry place. Please note: on delivery, the knife blade is lightly coated with protective oil. Simply wash before 1st use to remove.
