This set contains :
- 1 9cm paring knife (recommended for slicing, peeling or decorating small fruits and vegetables)
- 1 17cm santoku knife (a very good all-purpose knife in Japanese form, its curved blade creates a pendulum effect ideal for chopping, mincing or mincing)
These two knives are versatile, giving you a wide range of possibilities. They're a great choice for all your everyday cutting needs.
Wusaki Pakka X50 kitchen knives are suitable for both professional and domestic use. They are recommended for cooks who want to equip themselves with quality on a daily basis, without making any compromises!
Materials and manufacturing processes are designed to guarantee high-performance, long-lasting, ergonomic knives. A sleek, original design adds to all these advantages, making them as pleasing to the eye as they are to use.
The shiny-finish blade is made of German stainless steel (X50CrMoV15). This steel is renowned for its durability and ease of maintenance (including sharpening and washing).
It has a 15% chromium content, making it resistant to oxidation. Its carbon content is 0.5% (for hardness), and it is also enriched with Molybdenum and Vanadium (which have an impact on its impact resistance and elasticity, making it less brittle). The hardness of this steel is between 56/58 HRC on the Rockwell scale, a good compromise between edge life and maintenance.
For an ideal finish, the upper part of the blade is hammered with a press, creating unique patterns on each blade. In addition to its elegant appearance, hammering enhances the knife's non-stick properties (similar to honeycombing). Finally, the brand logo is laser-engraved on the cutting surface.
The V-edge cutting edge is formed on a strip of leather at a 15° angle. Penetration into skin or flesh is clean and precise, and food fibers are not damaged. The cutting quality of these knives is noticeable from the very first use.
The handle of every Wusaki knife is made of Pakkawood. This is a composite material often used in culinary circles, as it is durable and robust. It is composed of laminated wood and resin, which are then compressed at high temperature. The end result resembles natural wood, with unique veins undulating across its surface! Pakkawood is not only antibacterial, but also resistant to temperature variations and humidity (it is reputed to be rot-proof). It has been varnished for extra protection against moisture and stains. With its simple, straight shape, it can be used ambidextrously.
Its unusual red sheen highlights the blade's hammered steel, and the cap engraved with the Japanese "Tiger" character. It's important to note that Wusaki handles are made a little longer than the current cutlery market average, to be more comfortable to use whatever the size of your hand.
Finally, it's worth noting the simple yet effective design of the Wusaki Pakka X50 kitchen knives: the combination of materials and contrasting colors make them exceptional timeless pieces.
They are delivered in an elegant and protective black box. Thanks to this handsome box embellished with a tiger, you can store them carefully or give them as a gift to a lover of fine blades!
To care for them, wash by hand in lukewarm water and mild soap. You can then wipe the knives with a soft cloth and store them in a dry place. Please note: on delivery, the blades are lightly coated with protective oil. Simply wash before 1st use to remove.
Wusaki knives are manufactured by a small company located north of the city of Guangzhou, the capital of Guangdong province in Western China. This province is historically renowned for its knife-making expertise. Wusaki expertise is entirely governed by French manufacturing standards established for professionals in the sector.
