This Shotoh knife has a 13cm blade, which you can use to skilfully cut small fruits and vegetables(between the paring knife and the Western Universal knife ).
The blade has a core of powdered MC66 microcarbides, a steel renowned for its extreme hardness. This is followed by 132 layers of damascus on top. The damascus process consists of superimposing layers of soft and hard steel, giving the knife a unique blend of strength and suppleness. This combination ensures successful, pleasant cuts, with the knife adapting to your gestures and the food.
Thanks to this unique process, renowned among Japanese manufacturers (as inherited from master blacksmiths of ancient times), the knife also features a drape of waves running along its cutting surface. This makes the knife highly original, unique and intriguing.
In addition to top-quality base materials and the utmost care in manufacturing, the blade of this knife has been tempered using the special CRYODUR process. This involves soaking the blade in ice at -196°C, to give it tenfold strength and ultimate anti-corrosive properties. As a result, the blade achieves a hardness of 66 HRC on the Rockwell scale, an exceptional rating in the cutlery world! This means the knife retains its sharpness much longer than a standard blade, for more frequent sharpening.
Its symmetrical cutting edge (unlike many Japanese knives) means that both right-handed and left-handed users can use it with complete peace of mind.
The handle is a perfect extension of the blade. Made of maple wood, it contrasts perfectly with the metal-accented blade. Its unique grain gives it an incredible cachet. It also features the traditional "D" shape for a comfortable grip.
The steel base completes the overall balance of the knife.
