Knife specifications :
Let's talk about the blade first! Its San Maï structure is important, but what does it consist of? It's a 3-layer blade: a rigid core is surrounded by a layer of softer steel, which protects it. This makes the blade more balanced and resistant, and you can see this superimposition of steels on the bottom of the blade, with the little wave running along the edge.
At the heart of the knife is a stainless steel, 10Cr15CoMoV, which is very similar to VG10 steel. In fact, like VG10 steel, it has a high chromium and carbon content, which enhances its capabilities.
Its carbon content (1.05%) improves the steel's rigidity, so that it holds its edge longer. This results in a hardness of +-60HRC on the Rockwell scale. Chromium (15.5%) improves corrosion resistance, among other things.
The core is then surrounded by a softer stainless steel to protect it, as previously mentioned.
The blade is vacuum heat-treated. This process is advantageous because, in the case of standard heat treatment, certain elements present in the air (hydrogen, oxygen...) can react with the metal. The fact that this takes place in a vacuum creates a protected atmosphere so that the blade retains its full potential.
A stainless steel bolster links the blade to the handle. Its gently sloping surface makes for an easy, natural grip.
Finally, the blade has an attractive satin/fluted finish on both sides.
The handle is made from Pakka wood (or Pakkawood). This is a composite material combining laminated wood and resin, which are hot-pressed together. The result is perfect for the culinary world, as it is shock and moisture resistant. An elegant mosaic rivet in the center of the handle adds an exotic touch to the knife. The light Pakkawood color contrasts nicely with the satin-finish blade, and a red/gold border links the two.
A stainless steel base finishes the handle and balances the knife's weight. The handle is suitable for both right- and left-handed users.
The knife is available in a magnetic box for storage, or as a gift!

We recommend washing by hand with a sponge and mild detergent. Once the knife is clean, wipe it dry immediately to remove all traces of moisture and store it. Do not use the dishwasher or soak it in the sink.
