The MAC factory is located in Seki, the capital of Japanese cutlery for centuries. The brand was born in the 60s. Its founder worked part-time as a chef in the United States, supplementing his studies. It was there that he had the opportunity to test kitchen knives that were not necessarily to his taste.
One day, he was using a dull, heavy and very sharp German knife. He dropped the knife on the floor, and it stuck in the ground. When he tried to remove it, about 3cm of the point had broken off. He then repaired the blade with a whetstone, making the point "rounder". Gradually, he realized that this modification had significantly increased the knife's effectiveness!
When he returned to his homeland, this experience gave him the idea of creating the MAC company, to manufacture sharp, durable, lighter and safer knives, perfectly designed for professional cooks. The brand is now renowned the world over, with several patents to its credit.
The name MAC comes from the word "Macrocosm", which in simplified terms means "immense universe" (reflecting the founder's ambition to equip every country in the world with his knives). He chose to retain the first 3 letters of the word.
The CHEF range in detail:
The blade is made of AUS-8 steel, a Japanese stainless steel enriched with carbon, tungsten, molybdenum and vanadium. This alloy has an impact on both the blade's hardness and elasticity. The blade is rigid enough to hold an edge for a long time, and its mechanical strength is excellent. What's more, this steel is corrosion-resistant (no steel is 100% stainless).
The cutting edge has a special shape, between a Japanese angle (i.e. asymmetrical) and a Western V-angle. This combination offers a formidable cutting edge and longevity. You don't have to strain to slice food, which means less fatigue over the long term.
Final sharpening is done by hand, on a water stone. The skill of the sharpener in question ensures a razor-sharp edge.
The handle is made of Pakkawood, a mixture of resin and hot-compressed laminated wood. This composite material is resistant to humidity and temperature variations, making it ideal for professional use. 3 rivets consolidate the handle.
The knives are lightweight and pleasant to handle over time. Their ergonomic shape makes for a perfect grip, and the slightly folded base of the knife allows you to place your pinky finger firmly in the palm of your hand.
Care instructions:
Clean the knife by hand in lukewarm water with a little washing-up liquid and a soft sponge. Wipe with a soft cloth to avoid leaving any traces of moisture.
