Japan Kanetsune designs and manufactures its knives in Seki, the cutlery capital of Japan. The town's reputation is well established: over 800 years of know-how and tradition have been brought up to date with the latest innovations in steel.
The versatility of this Universal knife allows you to perform a wide range of kitchen tasks! Peel fruit, chop vegetables, cut cheese, mince garlic cloves and much more!
Its 15cm blade is designed according to the San Mai pattern, a simplified 3-layer damascus:
- The core is made of Swedish Sandvik 19C27 steel. Highly appreciated in cutlery, it has a chromium content of 13.5% and a carbon content of 0.5%. This gives it a hardness of around 58 HRC on the Rockwell scale. This means that the cutting edge of this blade is long-lasting and efficient. What's more, as this alloy is stainless, it is highly resistant to corrosion. The use of Sandvik steel reduces the frequency of your sharpening sessions.
- The top layer protecting the core is made of 410 stainless steel. When the blade is made, this layer surrounds the core (hence the 3 layers of steel). You can easily appreciate these 3 layers by looking at the edge of the blade.
The handle is made of pakkawood, a composite material resistant to temperature change, humidity and wear. Made from a mixture of wood and resin, this material is obtained by high-temperature compression. A stainless steel bolster connects the handle to the blade, and 3 stainless steel rivets enclose the full tang blade in the handle.
Choosing this knife means choosing the high quality of an efficient and elegant Japanese knife. Whether you're a hobbyist or a professional, you'll find a place for this Japan KanetsuneUniversal knife in your equipment!
