Description

As a specialist in Japanese sharpening stones, Suehiro is committed to developing practical, durable utensils that even novices can enjoy using, since stone sharpening can be impressive if it's never been done before.

To create the stones, follow these simple steps:

- Mix and stir ingredients in large vats

- Press each stone into a rectangular shape

- Allow shaped stones to dry for a short time

- Bake to set

- Carry out the final moulding by hand (a craftsman passes the stone over a grinding wheel to ensure a clean finish)

- Quality control before the stones are placed in the packaging

Suehiro manages every stage in the manufacture of the stones we create, from Research and Development to actual production.

This maxi whetstone comes from the Cerax range, which features stones fired at very high temperatures, making them more resistant to the risk of cracking. As a result, they are long-lasting and easy to use.

Its #1000 grit is considered medium, so it is recommended for regular maintenance of the cutting edge, to prevent it from becoming too dull.

Please note: the stone's dimensions may vary by a few millimeters, and its weight by a few grams - this is perfectly normal.

To use :

This stone can be used on both sides.

It should be soaked for 5 minutes before use. You can reapply water to the surface of the stone during sharpening, when you feel it's necessary. You can do this directly by hand, or with a pipette.

After a few moments' use, you'll notice a small colored sludge forming on the surface of the stone, and this is perfectly normal. This "sludge" is even essential, as it helps to sharpen the knife, so don't clean it during the process.

After use, you can rinse the surface and clean it with a soft brush. Wipe with a dry cloth, then leave to dry in a room at room temperature (keep out of direct sunlight for faster drying).

Complementary accessories:

A small Nagura stone (7.2 x 1.7 x 1 cm) is supplied with the stone. This is used to create the famous mud that facilitates the stone's action. As already mentioned, this reinforces the abrasive power of the maxi stone, thus increasing its effectiveness.

A flexible silicone base is also supplied with the pack, enabling you to stabilize the maxi stone during use. It's removable, so you don't have to use it if you prefer to place the stone on a cloth, for example.

as a result, i have no comparison, so my opinion is without argument. however, the contact with the site, the packaging and the delivery time, by colissimo, are perfect.

A good compromise between stone hardness and sharpening power (less wear on the stone than some), the 1000 grit is very satisfying, a must-have, a base before moving on to finer grits. The maximum stone size is a real plus and corresponds to more frequent use. Thanks to the chef's knives team for their good advice!
For a long time to come...

The title refers to a #240/#1000 Kasumi mixed stone that I bought over ten years ago and which, although worn, I still use! This Suehiro, which is much thicker, should be with me for many years to come... With its respectable working surface, it's very pleasant to use. The sensation when sharpening is particularly pleasant, a sort of "velvety" feel combined with efficiency, as it removes matter, no worries. Just one regret, which doesn't influence the opinion, most Suehiro products are unavailable on the site... Otherwise, I would have gladly added other grains.
