Its dual surface ensures particularly effective care of your blades: the #240 abrasive-grit face performs deep sharpening (to remove waste accumulated from repeated cutting), while the #1000 medium-grit face enables you to more gently sharpen the edge of the knife, to give it a razor-sharp edge. - wet it about ten minutes in advance
- place the guide on your blade
- move back and forth over the stone
- during this operation, a black filing will appear: this is what sharpens knives. Once the filings have solidified, add more water and sharpen the rest of your knife.
