A few words about Suehiro:
He's a Japanese specialist in professional sharpening stones, which he wants to be practical and durable. To achieve this, he manages every stage in the manufacture of his stones, from research and development to actual production. First, the ingredients are mixed and stirred in large vats. Each stone is then shaped into a rectangle using a press, and left to dry for a short time. They are then fired, and a craftsman passes the stones over a grinding wheel to ensure a clean finish. Finally, quality control is carried out.
How to use your stone :
The Ouka 3003 small Sharpening stone features, as its name suggests, a #3000 grit. This fine grit is recommended for giving a well-polished finish to the edge of your favorite knives.
Its smaller size than its counterpart, the Ouka 3000 stone, makes it more suitable for domestic use.
It is mounted on a non-slip base with two raised feet, which ensure stability when in use.
Before use, it should be soaked in water for 5 to 10 minutes. You can reapply water to the surface of the stone during sharpening, when you feel it's necessary. You can do this directly by hand, or with a pipette for greater precision.
After a few moments' use, you'll notice a small colored sludge forming on the surface of the stone, and this is perfectly normal. This "sludge" is even essential, as it helps to sharpen the knife, so don't clean it during the process.
In addition, a small Nagura stone (approx. 6.6 x 1.5 x 1.4 cm) is supplied with the main stone. This small, brick-colored model is used to create the famous slurry that facilitates the stone's action.
When you've finished, you can rinse the surface you've used and clean it with a small, soft brush. Wipe with a dry cloth, then leave to dry in a room at room temperature (do not place in direct sunlight; it should dry naturally, without added heat).
Important: the dimensions of the stone may vary by a few millimetres, and its weight by a few grams, but this is perfectly normal.
