Description

Stone:

From the Debado series, a range specially designed for large knives. Suehiro Debado stones are much wider and heavier than standard stones. As a result, their surface area and stability are improved. So you can easily handle your sashimi knife, your carving knife...

Note: the stone's dimensions may vary by a few millimetres, and its weight by a few grams - this is perfectly normal.

The Debado MD-400 stone is designed according to the brand's original firing process. As such, it contains no synthetic binder, and is highly resistant to wear.

Finally, there's no need to soak it for ten minutes before use. Non-absorbent, it just needs to be moistened before serving, saving you time.

After a few passes of your knife over the stone, you'll notice a small colored sludge appearing on its surface, and this is perfectly normal. This "sludge" is even essential, as it helps to sharpen the knife, so don't clean it during the process.

After use, you can rinse the used surface and clean it with a small, soft brush. Wipe with a dry cloth, then leave to dry in a room at room temperature (keep out of direct sunlight for faster drying).

Its #4000 grit is considered very fine. It is therefore suitable for knives whose cutting edge needs polishing, to obtain a "razor" cutting capacity. Such a grit is more suited to high HRC knives, which are capable of holding such a finish. Steels that are too "soft" won't really see any lasting advantage.

Complementary accessories:

A small Nagura stone comes with the main stone (7.3 x 2.3 x 1.8 cm). This small model helps create the famous mud that facilitates the stone's action. As we've already said, it reinforces the stone's abrasive power, thus increasing its effectiveness.

A soft silicone base is also supplied, to help stabilize the stone during use. It's removable, so you don't have to use it if you prefer to place the stone on a cloth, for example.
