A fine, flexible blade for precise fish preparation
The Fukito Olive Damascus 14Cr 18cm fillet knife is designed to lift fillets delicately and follow the bones as closely as possible! Its long, narrow and slightly flexible blade separates the flesh without damaging it, whether you're working with sea bass, sea bream, sole or salmon. Its high-grade powdered steel and refined finishes make this knife as technical as it is elegant.
A damascened blade designed for precise cuts
The 18cm blade rests on a damascened structure composed of 73 layers of steel. In the center, a particularly hard core ensures cutting performance, while the outer layers of softer stainless steel add strength and reveal the characteristic ripples of damascus.
The core of the blade is made from 14Cr14V3MoNb powdered steel, a high-end alloy containing around 1.4% carbon and 14% chromium. Thanks to this composition, the blade develops a very fine edge, capable of gliding easily between flesh and edges. Chromium improves resistance to oxidation, which is particularly appreciated when preparing fish.
The blade benefits from vacuum heat treatment, a precise method that optimizes the internal structure of the steel. It thus achieves a hardness of around 64 HRC on the Rockwell scale. This high level of hardness means that a precise cut lasts longer. Theflat grind accentuates the fineness of the cutting edge and ensures a clean cut, without tearing the fragile flesh of the fish.
Olive wood handle with natural charm
The handle is made from stabilized olive wood, a noble material whose structure has been reinforced to better resist humidity and temperature variations. This process preserves the wood's natural pattern while enhancing its durability.
Each handle features a unique grain, with nuances specific to each piece. Olive also offers a warm touch and a pleasant grip, much appreciated during precise gestures.
The polished stainless steel bolster provides an elegant link with the blade. The triple gold and red edging underlines this junction with finesse, while the mosaic rivet in the center of the handle adds a distinctive decorative signature. The handle ends in a bevelled stainless steel cap, which reinforces the feeling of quality.
A storage case is included. It protects the blade and offers this Fukito Olive Damascus fillet knife in a neat presentation.

How to use my Damascus fish knife
Wash your knife by hand with a soft sponge, then dry immediately. Do not put it in the dishwasher or leave it to soak in the sink for a long time. Use a wooden or synthetic board to preserve the cutting edge. To maintain cutting precision, sharpen regularly with a stone suitable for high-hardness steels.
