Maintenance is essential to extend the life of your knives and preserve their sharpness. First and foremost, storage is a priority: it's best to keep them in a block of kitchen knives or on a magnetic bar, because if they're lying loose in a drawer, they risk damaging their edge, and that can also be dangerous for you.
Secondly, it's essential to use the right knife for the right job, as each knife is developed according to its specific function. If they are used incorrectly, their performance and durability will be compromised. For boning chicken, use a boning knife; for small fruits and vegetables, use a paring knife; for slicing bread, use a bread knife; finally, the chef's knife is the all-purpose knife.
When it comes to maintenance, it's very important to wash your knives in water with a mild soap after each use and dry them immediately. Beware, however, of knives with wooden handles, which are likely to swell due to temperature variations and humidity!
