FISCHER: THE BENCHMARK FOR PROFESSIONAL KNIVES
It's not always easy to choose a professional knife from among all the existing brands: a professional knife requires certain qualities that not all knives have! Sturdiness is the first essential. To avoid the unpleasant surprise of finding yourself with a broken blade after a month's use, we recommend you opt for a Fischer professional kitchen knife. The Sandvik knife is one of the most sought-after knives by professionals. The Swedish steel used to design the blades is top-of-the-range. Compared with standard steels, this steel promises longer edge retention, and therefore less frequent sharpening. Sturdiness is also linked to edge quality: Fischer professional knives have the particularity of requiring less frequent sharpening, thanks in particular to the properties of Sandvik steel.
The handles of Sandvik professional knives are designed to combat RSI and other fatigue-related problems associated with intense use of the knife. Buying a Fischer professional knife is your guarantee of peace of mind!
FISCHER KNOW-HOW
For more than 150 years, Fischer cutlery has drawn on the expertise of each generation to offer customers top-quality kitchen knives, Utensils and sharpening implements made in France.
Knives designed in Swedish Sandvik steel achieve a hardness of 56-57 HRC, an extreme hardness that enables professionals to keep a sharp edge for a long time. Knives in other ranges are made from world-renowned French steel, containing 0.4% carbon, 13% chromium and molybdenum. French steel knives are hardened to 53-54 HRC.
In order to provide users with the perfect professional chef's knife, Fischer has taken part in studies to prevent musculoskeletal disorders, and has created professional knives with handles made of a special material (polypropylene + elastomer) and shape, thus preventing RSI as far as possible. These handles are anti-bacterial and easy to maintain, saving cooks precious time.
